Gluten Free Apple Cinnamon Muffins

  • 2 cups almond flour sifted
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 2 tbsp cinnamon
  • 1/4 cup coconut oil liquid
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 2 medium apples diced (I keep the peels on)
  • 1/4 cup amaranth flour
  • 1 large egg


  • Preheat oven to 350˚ F
  • Line the muffin tins with paper liners, or grease tins with coconut oil
  • Combine all the dry ingredients
  • Combine all the wet ingredients
  • Add the wet ingredients to the dry ones, and mix into a batter
  • Fold the diced apples into the batter
  • Spoon the batter into greased muffin tray
  • Bake for 30 minutes
