This weekend I had a brainstorm.
On Saturday Sunny had a friend over after volleyball, they hadn’t eaten anything and I knew they needed something nutritious, balanced, and most importantly, friend-friendly.
You know what I mean by friend-friendly, right? Friend-friendly so our children’s friends don’t think we eat “weird” (aka, fresh and real) food all the time.
Pizza is always a winner with the tweens, and I typically have a homemade grain free pizza crust in the fridge, so I grabbed it and remembered I had shredded too much cheese and cut more pieces of salami than we needed the week before and had popped those into a seperate freezer bag, and grabbed those as well.
Before I combined everything I had an a-ha moment…what if all these ingredients were frozen and packed into a ziploc freezer bag so every time you wanted a pizza you just grab the items from one bigger bag, assemble your pizza, bake, and enjoy.
Sometimes kids are picky and sometimes we run out of ideas and sometimes the friends who will be dining with us don’t like what we serve (again, because we are those people). It’s during times like these I would love the convenience of convenience food. However, instead of purchasing frozen pizza full of anti-nutrients and j-u-n-k, you can pre-bake crusts, add your topping(s) of choice, cool them and slice to serve.
The above photo shows how easy it is to grab a gallon sized ziplock layered with parchment paper, tuck in your pre baked grain free pizza crust, and a small bag of pizza sauce. Grab three more small bags and fill with sautéed vegetables, shredded cheese and/or meat. What I had in this photo was shredded goat cheddar cheese, pepperoni and pesto, all frozen on a whim. The quick pizza I was able to create for my daughter and her friend was super simple, I had to share!
