A favorite snack in our household are peanut butter balls.
My Top 3 Reasons for Why I Love That They Are a Favorite Snack In Our Household:
#1-they are easy peasy to make and we always have oats and peanut butter
#2-the girls like to help in making these
#3-This is simple. I like to eat.
The base foundation for each batch of these I make is:
1 cup oats
1 cup peanut butter, usually crunchy
a smidgeon of raw honey (or not, depends upon the day)
We let the peanut butter ( or almond/cashew butter) sit to room temperature, if it isn’t already, and slowly, with a wooden spoon, mash the peanut butter and oats together.
We also have a few variations we like, such as adding shredded coconut, raisins, carob or chocolate chips, or rolling in cocoa powder. Sometimes we make them like our version of monster cookies, so they are a monster peanut butter ball with all or some of the above.
A tip that’s helpful to note for making these is to have a bowl of water close by. As you make these, your fingers get sticky and peanut buttery, and if you quickly dip them into the bowl of water between the rolling of peanut butter balls in your hands, you will have happy fingers.
Once you’ve mixed the goodies in that you’d like, you roll them into balls and set them on a cookie sheet or plate, depending upon how many you make. I refrigerate until firm, then store them in a bowl and pack them in lunches, or grab a few with a glass of raw milk for a snack.
