Monday Meal Planning

Whoa, is it Monday already?  This one really crept up on me.

Sources of Vitamin C - oranges, strawberries, red and green capsicum peppers, dark leafy green, parsley, broccoli, paw paw and kiwi fruit - for healthy diet and slimming program.

Do you ever have a week that just gets away from you?  Our oldest ended up on a road trip to the Black Hills with her Oma and great grandma, so Annie and I ended up having leftover chicken, popcorn and salad for dinner one night, the three of us went out for dinner on Friday night and we were at a birthday party/bbq/potluck on Saturday night.   As a result I didn’t use up a couple or my menu items which means a fast forward for me since I already have the ingredients I need on hand!  I’ll take grilled fish tacos over just about anything, so was thrilled to leave the dishes in the sink for Friday nights outing.

On the menu for the week (and it’s a short one as the girls and I are headed to the woods later this week):

Breakfast:

bacon waffles ( I really need to dedicate an entire post to this new love of ours, so divine and straight from the farm)

raw milk yogurt and freshly picked blueberries and homemade granola

pancakes

Snacks:

these fried bananas look amazing!

Made this raw milk ice cream recipe yesterday (changes I made were using 2 tsp vanilla extract as suggested if not using vanilla bean, and I used 2/3 cup honey instead of sugar-think I could use even less next time). This ice cream comes out like a soft serve, which we all loved and the honey makes it rich and creamy in taste. I made a blueberry sauce for topping by throwing in 1/2 cup blueberries with a splash of orange juice into the Blend-Tec and drizzled over ice cream.   It was a hit to say the least.

been living off popcorn made with coconut oil, butter, sea salt and nutritional yeast lately, so I know we’ll head for that snack (or meal, ahem, depending upon the day) this week

This looks like it might take care of my chocolate craving.

Dinners:

pork chops, salad, Italian rice pasta salad (homemade dressing and olives, garden tomatoes, feta, and swiss chard)

pizza, more salad ( I am up to my eyeballs in lettuce and greens from the garden!), watermelon

didn’t get to this one last week, so it’s on the menu again: slow cooker sesame chicken

cobb salad is making an appearance as we also didn’t get to this one last week

Then we’re off to the woods and water of Ely late in the week, wherein I will grab everything from the fridge and a few things from the freezer and call it good for the weekend.
