Kid Friendly Super Juice

 With spring around the corner, I got a hankering for a taste of summer…you know what I mean, the smell of dirt on carrots as you gently release them from the garden, the sweaty smell of the kiddos with their rosy red cheeks from playing outside all day, the grime in the creases of their fingers, and I know it’s just around the corner.
Despite the snow falling today, the smell of stew on the stove, and the colds and flu I continue to see in my Nutrition Response Testing practice every day, all that would suggest we are still in winter, the first day of spring HAS now come and gone and I’ll be darned if I’m not going to be ready for it.  Just to be certain, we have ordered the straw bales necessary for our straw bale garden this year—gotta be organized and ready as I won’t be the one hauling them around this year!
In this current pregnancy of mine, I have remained careful about what I eat though a bit more relaxed when my body decides it wants something in particular…today it was the sweet taste of orange and carrot together, in the blender.
Once I threw it together, it was more of a juice (I have a BlendTec so have to add water if I don’t want to crunch my juice).  Naturally the girls asked for a taste and I could tell they wanted something different so I made one for them with half full fat coconut milk and half water, and they were thrilled with the outcome.
In some ways it reminded me of the orange julius I created for them a couple years ago just a little more simple, so I aptly named it the Kid Friendly Super Juice…loaded with nutrients and antioxidants, it was a great pick me up with a handful of roasted almonds.

Kid Friendly Super Juice

Course Beverages
Servings 1

Ingredients
  

  • 6 ounces water
  • 1 orange
  • 1 carrot
  • 4 ice cubes
  • ***optional couple ounces of coconut milk full fat for a creamsicle taste!

Instructions
 

  • Peel the carrot and the orange.
  • Pour the water into your blender, along with the ice cubes.
  • Blend and serve.
