Super Bowl Sunday is synonymous with food. Let’s clean up your spread this year without compromising on taste. Here are two of my favorite comfort food snacks:
Nachos
Nachos is a great go-to snack. Sometimes we have this for dinner because it’s so easy and everyone loves it. The great thing about nachos is you can build them how you like. Here are some of the toppings we use at our house.
- Ground meat seasoned with a clean store-bought or homemade taco seasoning (sugar, grain, and filler free)
- Sharp cheddar goat cheese, shredded
- Lettuce, chopped
- Tomatoes, chopped
- Olives
- Can of green chilies
- Sautéed onion and peppers
- Guacamole
- Grain-free chips: Trader Joe’s, Siete, or Aldi, OR plantain chips
A non-dairy favorite at our house is the Paleo Nacho Cheese Sauce recipe by Danielle Walker — that works as a fantastic melty cheese drizzle that nobody around here complains about.
Layer your chips and top with beef, tomatoes, olives, and chilies.
Sprinkle shredded cheese or drizzle with Paleo Nacho Cheese Sauce.
Bake/warm until crisp. Serve with guacamole and more Paleo Nacho Cheese Sauce for dipping.
Messy and oh, so delicious.
Ranch Chicken Wings
Marinate chicken wings in Primal Kitchen Vegan Ranch for 24 hours or overnight.
Place wire rack on parchment covered baking sheet. Lay wings on the rack.
Bake for 45 minutes at 425 degrees. If you need more crisping, bake for another 10 – 15 minutes.
